Erytrytol to naturalna substancja słodząca, stosowana jako alternatywa dla tradycyjnego cukru. Należy do alkoholi cukrowych - polioli. Erytrytol ma zerową wartość kaloryczną. Charakteryzyje się wysoką słodkością (60 - 80 % sacharozy). Erytrytol ma zerowy indeks glikemiczny oraz bardzo niski indeks insulinowy II = 2.
Erytrytol wygląda i smakuje jak cukier, nie pozostawiając w ustach nieprzyjemnego posmaku. Może być stosowany jako zamiennik cukru do słodzenia, pieczenia, gotowania oraz przyrządzania deserów. Ze względu na poziom słodkości należy użyć nieco więcej erytrytolu niż sacharozy.
