Food is primarily a source of building material (protein) and energy (sugars and fats) for the athlete's body. However, apart from these three, basic, food contains a whole range of other micronutrients - vitamins, minerals and substances with a vitamin-like effect - necessary in small amounts for the proper course of all life processes, especially those related to exercise adaptation and development of sports form.

Chelation of minerals is an extremely important process of binding metallic elements by weak organic acids, e.g. amino acids, enabling good absorption of elements from the gastrointestinal tract and their distribution to the life activities that involve them.
